Against all Grain, by Danielle Walker is ABSOLUTELY amazing!!!!!  The recipes are simple and delicious.  Some of my favorites; pesto-stuffed prosciutto chicken on page 122, is utterly addicting…and I didn’t have prosciutto on hand so I substituted a fabulous Italian salami.  Usually, I give my husband a larger portion but this dish….I literally walked over and asked to share some of his.  The cauliflower absorbs the luscious flavor and has a wonderful texture.  The second time I made the recipe I doubled up on the cauliflower and…well, I used Italian double smoked bacon instead of prosciutto….again….mouth watering.

Meatloaf meatballs on page 148 were another winner.  Very easy to prepare, sumptuous and delightfully filling.  For preparation ease, I used a store bought organic marinara sauce and sprinkled some mozzarella cheese on top of the meatballs, serving them on large fresh tomato slices and a chopped basil.  We had leftovers…thank goodness and a bit surprising because they were delicious.  I diced up the meatballs and sauteed them in a pan and placed them on an iceberg salad with onions, tomato’s, buffalo mozzarella and lightly dressed with olive oil.

Muffin time!

I love a good muffin for an afternoon pick me up… finding a moist gluten free low sugar option can be a challenge….

However, today after multiple failed attempts I made amazing Pumpkin Raisn Walnut gluten free muffins. Thank you to http://www.kitchenstewardship.com for the recipe …. I did make a few adjustments.

Garbanzo bean flour instead of buckwheat flour, 1/4 c coconut sugar + 1/2 c swerve (sugar replacement) instead of honey.

A little butter and fig preserves and my afternoon looks much brighter.
